CREAMY RISOTTO RECIPE

It usually begins with gently sautéing finely chopped shallots in extra virgin olive oil without browning them. Mix in the rice, and stir for two to three minutes until it begins to pearl up. Now the rice is ready to receive the liquid of your choice. (Wine and/or stock made from fish, chicken, beef, or vegetable). After 20 minutes, when rice is tender, add in remaining flavors according to your recipe. Vegetables, butter, herb, and grated Parmesan are usually mixed in when the rice hasn’t yet absorb all the stock.
